Penovani Khachapuri (Puff Pastry Cheese Bread) recipe
Vegetarian By pre-orderPenovani is the khachapuri you buy warm from a Tbilisi bakery on the way to work: crisp, flaky layers folded around salty melted cheese. It is the quickest khachapuri to make at home, because good store-bought puff pastry works perfectly.

Ingredients
- 500 g puff pastry (yeast puff pastry if you can find it)
- 250 g imeruli cheese or feta
- 250 g sulguni or mozzarella
- 1 egg, plus 1 yolk for brushing
- A little flour for rolling
Method
- Grate both cheeses and mix with the egg.
- Roll the pastry lightly to 3 mm and cut into four 15 cm squares.
- Put a quarter of the filling in the centre of each square.
- Fold the corners to the centre like an envelope, leaving a small window of cheese in the middle.
- Brush with yolk and bake at 200°C (390°F) for 20 to 25 minutes until puffed and deep golden.
Tamara's tip: if your feta is very salty, soak it in cold water for an hour first. The cheese should taste like the sea, not like a salt mine.
